Yes, the holidays can get quite frantic at times. What gifts to get your family members and friends? Is that extra special gift going to arrive on time? All of the holiday parties {or hosting a holiday party}. Sometimes it can be easy to just grab a pretzel from Auntie Ann’s in the mall {I mean, how can you not? That’s where these cranberry pistachio energy bites come into play. They’re red, green and white, which makes them super festive for the holidays. But they have all of those good for you ingredients that will help keep you full while running around the mall. Or you know, sitting on the couch ordering all of your gifts {no judgment here!}.

I definitely was snacking on a few while putting up our Christmas decorations over the weekend. They come together so quickly, it’s hard not to make a batch on Sunday to enjoy the rest of the week.

Now you probably already know my love of great energy bites. Case-in-point, these chunky monkey protein bites, and these trail mix energy bites. Both are insanely delicious, but it was time for a more festive, holiday protein/energy bite. These cranberry pistachio energy bites definitely fit the bill.

Just mix together all of the ingredients:

  1. Oats – protein rich and full of fiber
  2. Honey – a great natural sticky sweetener
  3. Chia seeds – an omega-3 fatty acid which can help with inflammation and help lower the risk of heart disease
  4. Peanut butter – another great protein {and what helps stick everything together}
  5. Cranberries – look for ones that are made with 50% less sugar
  6. Pistachios – great for a healthy heart and improved digestion
  7. White chocolate chips – just a little for that sweet kick

With the little addition of cinnamon, these bites make their way into holiday-esque territory. Stir all of the ingredients together and roll into 30 balls. And thus, the cranberry pistachio energy bite is born!

I continue to sneak one or two bites from the refrigerator every day because the salty, tart and sweet flavor is just too irresistible. They’re perfect to pack in a little Ziploc bag and keep in your purse for when everyone is just too tired to continue shopping.

These holiday inspired bites are perfect for snacking on while shopping. They’re super easy to make and have the perfect salty-sweetness to keep you going.
Course: Dessert, Snack
Servings: 30
Ingredients
  • 2 cups old fashioned oats
  • ¼ cup chia seeds
  • ½ cup honey
  • ¾ cup peanut butter
  • 1 tsp. vanilla
  • ¼ tsp. salt
  • 1 tsp. cinnamon
  • 1/3 cup white chocolate chips
  • 1 cup dried cherries
  • ½ cup no salt added shelled pistachios
Directions
  1. In a large bowl, stir together all of the ingredients until the mixture is well coated in the peanut butter and honey.
  2. Roll into 30 bite size balls {mine are about 2-3 bites} and store in an airtight container.
