Sugar Cookie Bars

Sugar cookie bars are a mash-up of confetti sugar cookies and chocolate chip cookies that are soft, thick and topped with cream cheese marshmallow frosting.

Were you a fan of the Great American Cookie Co.? You know, that staple mall food court spot that had the best cookie cakes? They also had the best double doozies, but we’ll save that for another time.

Whenever it was someone’s birthday at school, you would always hope that the person was smart and brought in a buttercream frosting covered cookie cake. That it would have ‘happy birthday’ written in thick frosting as well.

The amount of sugar in the cake and frosting would surely induce a sugar-coma, but it did not matter.

Because my birthday was in the summer, I was never able to celebrate with my classmates and one of these cookie cakes.

So while it’s not my birthday, I thought America’s birthday would be the perfect time to celebrate, but instead with sugar cookie bars.

How to make sugar cookie bars

Two simple ingredients

Seriously, these cookie bars are probably the easiest you will ever make. Mainly because it requires no mixing on your part.

No bowls, spoons, hand mixers, measuring. Nope. Just two simple ingredients go into making these insanely thick and chewy sugar cookie bars a reality.

So you probably know that one of those ingredients is sugar cookies. I found these Pillsbury confetti break and bake sugar cookies that I thought looked super fun. They also reminded me of birthdays, which was extra perfect for these bars.

But I didn’t want to stop there. Nope. I decided to add in chocolate chip cookies as well. I know, gettin’ super crazy here!

Making sugar cookie bars

Now that you have your two ingredients, it’s time to put them together.

These are probably going to be the shortest directions ever, but here we go.

Press the sugar cookie dough into the bottom of a greased pan. Press the chocolate chip cookie dough on top. Bake.

They both start to meld together, which makes them the perfect combo of both sugar cookie and chocolate chip cookie. Is there really anything better?

It gets better

The sugar cookie bars themselves are so delicious. Crunchy corners, yet gooey center, that make these bars to die for.

But, I told you it gets better, and it totally does. Mainly because we’re making an out-of-this-world cream cheese marshmallow frosting.

Yes, you read that correctly, marshmallow is getting blended in with cream cheese. Just when you thought that cream cheese frosting couldn’t get any better, it does.

Now, you don’t have to get as fancy as I did with this sugar cookie cake/bar. I just thought it took it to the level of the Great American Cookie Co., so I piped the frosting and decorated with patriotic M&M’s.

Feel free to schmear {yes, like a bagel} the frosting all over the bars if you’d like instead. Still highly suggested to top with festive M&M’s, or even more confetti sprinkles. It’s up to you.

Let’s celebrate with sugar cookie bars

No matter what you’re celebrating, whether it’s a birthday, America’s birthday, backyard picnic because it’s summer, or literally any other holiday you can think of, these sugar cookie bars need to make an appearance.

I took them over to our neighbors for a birthday party, and I couldn’t stop eating them. I had even taken a big bite out of one before we left.

Burken told me I couldn’t take the cake over like that, but who cares? It was too moist and soft and crunchy all at the same time to not be eaten.

Sugar cookie bars are a mash-up of confetti sugar cookies and chocolate chip cookies that are soft, thick and topped with cream cheese marshmallow frosting.

Ingredients
  • 1 {16 oz} pkg Pillsbury confetti break and bake cookies room temperature
  • 1 {16 oz} pkg Pillsbury chocolate chip break and bake cookies room temperature
  • 8 oz cream cheese softened
  • 1/2 jar marshmallow creme
  • 1 cup powdered sugar
Directions
  1. Preheat oven to 350°F and grease an 8" x 8" pan with baking spray.

  2. Press the confetti cookies into the bottom of the pan. Press the chocolate chip cookies over the top {it's okay if they mix together}.

  3. Bake for 30-35 minutes, until edges start to brown and a toothpick inserted in the center comes out clean. Remove and let cool.

  4. Meanwhile, in a medium-sized bowl, beat the cream cheese on medium speed with a hand mixer until smooth.

  5. Add the marshmallow creme and beat until incorporated. Add the powdered sugar, a 1/2 cup at a time, and beat until combined.

  6. If you'd like to pipe the frosting onto the cooled sugar cookie bars, cut the corner of a Ziploc or piping bag off and place a piping tip inside.

  7. Place the bag in a glass and fold the edges over the top. Spoon the frosting into the bag. Pipe the entire cake, or a design as you'd like.

  8. You can also frost the bars without piping if you'd prefer. Sprinkle with colored M&M's or sprinkles as desired.
