These healthy peanut butter cups are an amazing Reese's peanut butter cup copycat. If you love peanut butter and chocolate {and who doesn't?!}, then you're going to love these bite-sized treats!

  • 1 cup dark chocolate chips
  • 2 Tbsp. unsweetened vanilla almond milk
  • 1/2 cup natural peanut butter
  • 1/2 cup PB2*
Directions

  1. In a small microwave safe bowl, add the chocolate chips and melt in the microwave. Microwave about 30 seconds, stir and then 15 seconds at a time, stirring after each, until chocolate is melted.
  2. Stir in the almond milk until smooth.
  3. Line mini muffin tins with mini cupcake wrappers and pour half of the melted chocolate into the bottom. Place in the freezer for about 5 minutes.
  4. Meanwhile, stir together the peanut butter and PB2. Form the mixture into 12 balls and flatten slightly to fit into the muffin in.
  5. Remove the muffin tin and press the peanut butter round into the bottom. Pour the remaining melted chocolate over the top and freeze for about 5 more minutes until set.
  6. Store in an airtight container in the fridge, on the counter, or even in the freezer for a cool, sweet snack.
