Blueberry pistachio granola is the perfect mix of sweet and salty. Freeze dried blueberries add the sweet, while crunchy pistachios add the salty. Whip up this easy homemade granola in under 40 minutes.
2 ½cupsold fashioned oats
1cupfreeze dried blueberries
2Tbsppacked Truvia brown sugar blend
¼cupmelted coconut oil
Preheat oven to 300°F. Grease a large baking sheet with cooking spray.
In a large bowl, stir together the oats, chia seeds, quinoa, pistachios and blueberries.
In a small bowl, whisk together the honey, maple syrup, brown sugar, oil, vanilla, cardamom and salt.
Pour the wet ingredients over the dry ingredients and stir until coated.*
Spread the granola out on the prepared baking sheet in an even layer.
Bake for 15 minutes, rotating the pan, and continue to bake for an additional 10 minutes.**
Place the baking sheet on a wire rack to cool.
Break into pieces and store in an airtight container.
*Note: the mixture may seem dry at first, but keep stirring until everything is coated.
**Note: if you have a darker pan, I would suggest baking for 7-8 additional minutes.
