Blackberry crumble bars are a healthy, gluten free treat that will instantly make you think of summer. With a hearty oat crust, sweet blackberries and a toasted crumble topping, you'll be making these bars on repeat.

2cupsoat flour
½cupcoconut flour
¾cupold fashioned oats
3tsp.xanthan gum
1tsp.baking powder
½tsp.salt
½cupmelted coconut oil
½cuppure maple syrup
⅓cupraw cane sugar
1tsp.vanilla
1egg*
1{12 oz} container black raspberries
Crumble Topping Ingredients:
1cupold fashioned oats
2Tbsp.Truvia brown sugar baking blend
2Tbsp.butter**

Directions:
Preheat oven to 350°F and grease an 9”x9” pan with baking spray.
In a large bowl, whisk together the flours, oats, xanthan gum, baking powder and salt.
Stir in the coconut oil, maple syrup, sugar, vanilla and egg until combined. Press the mixture into the prepared pan.
In a small bowl, mash the blackberries. Leaving some blackberries larger. Drain the blackberries and spread in an even layer over the bars.
In a medium bowl, mix together the crumble ingredients, using your fingers to create a crumbly texture.
Sprinkle over the blackberries.
Bake for 28-32 minutes, until set. Remove and let cool for about 10 minutes before slicing.
Recipe Notes
*Note: use a flax egg to make vegan. Stir together 1 Tbsp. flaxseed meal and 2 ½ Tbsp. water.
**Note: use coconut oil to make dairy free and vegan.
