Ingredients
3cupsold fashioned oats
1cuppeanutschopped
1cupuncooked quinoa
1 ½ cupsoat flour
½cuphoney
½cuppure maple syrup
¼cupnatural sugar
⅓cupwater
1tsp.vanilla
¼tsp.salt
1{16 oz} jar natural peanut butter
½cupmelted coconut oil
1large egg white
1cupdark chocolate chips
Directions
Preheat oven to 300°F and spray a large baking sheet with cooking spray.
In a large bowl, stir together the oats, peanuts, quinoa and oat flour.
In a small saucepan, heat the honey, pure maple syrup, natural sugar, water, vanilla and salt over medium heat, until sugar is dissolved.* Remove from heat.
Add the peanut butter and stir until combined; allow to cool slightly.
Stir in the coconut oil and egg white to the cooled peanut butter mixture and pour over the oat mixture. Stir until oats are completely coated.
Spread the mixture in an even layer on the prepared baking sheet.
Bake for 30 minutes, rotating the pan halfway through.
Place on a wire rack to cool, then cut into 18 bars.
